I’m at my goal.

I seriously cannot even believe I’m typing those words.

Yep.

100 pounds down.

And now?

The hard work begins.

Just between us? I was a little worried. How was I going to learn to cook? What was I going to learn to cook? How in the world was I going to prepare healthy meals that tasted good and kept me on track.

But now?

I have a system. I have a plan. I have a way to succeed.

Here’s what I made last night for dinner.

It’s one of my new meals that I’ve added to my recipe spreadsheet that are so easy to prepare.

To make this all we did was grill chicken on the grill outside (and added a little bit of Tony Chachere’s seasoning).

Then we filled the bowls with this AMAZING cauliflower rice that I’m hooked on (I love this alternative to noodles, too), tomatoes, avocados and cheese.

That’s it.

Oh wait! I ended up adding a tiny bit of fresh basil to the top (after I took the pictures) from our herb garden.

Super simple and easy and SO YUMMY.

And the best part?

I plan out the recipes for the week (like this one) and then I head to the computer and put in a Walmart+ order for all the ingredients.

Walmart+ makes is SO EASY. It’s all right there and ready to go and it’s helping to keep me on track.

    Try this, it's our favorite. Place a little olive oil in a large fry pan. Sauté mushrooms in a pan -160z. fresh Add some onion Sprinkle of garlic powder, 1/2 tsp. salt, some fresh ground pepper. Family size bag of Green Giant cauliflower rice and 1/2 cup chicken or vegetable broth. Mix until heated through. Sprinkle some goat cheese on the top and place a lid on the pan, off of the burner, so cheese melts. I'm still trying to make homemade chocolate chip cookies taste like some thing healthy. : (

For the middle-0f-the-store items, I check the sugar and carb content. The items must be no sugar and low carb.     Good for YOU! That's such an accomplishment so be proud Ü I'm at my goal weight, too, living a ketogenic lifestyle and I know how much cauliflower rice has become a staple for me, as well! Is much more versatile than people think. I "dry fry" it in a pan with chicken broth until all the liquid has evaporated out. Really takes out any strong cauliflower taste that most people don't like about it. That was a game changer for me getting my Husband to finally eat it Ü I also mixed it with cream cheese to make mock sushi rice used in my Keto California Rolls or Sushi Bake Casserole. And I only wish I didn't live out in the boonies so I could have Walmart deliver to my house. I'd love to read more posts about your healthy meal choices!

    Congrats!!! You look fabulous girly. I had a forced start. Yep got the wake up call from the Dr. after my last lab work. I started with the Foodi. It’s been easier to fix meals than my usual way to cook. The recipes are all over Pinterest. I was down 26 lbs in the first month. Fingers crossed I can do as well as you. Cheers.

    Dear Karianne, CONGRATULATIONS on making it to your goal weight!!!!! That takes so much commitment and perseverance, and you did it!!! You must be thrilled!!! You look absolutely beautiful!!! I lost 80 lb, reaching my goal in May of 2018. I did really well with maintenance until Covid, then let down my boundaries. So I am now working on taking off the Covid 15. But having 15 lb to lose is so much better than 80, and I NEVER want to go back to where I was!!! If I can give you any advice, I would say: Keep doing what you have been doing! If you have been sugar and junk carb free, keep on keeping on. If you used portion control, continue weighing and measuring. Weighing and measuring for life is the ONLY way I will have a chance at keeping the weight off, as well as staying away from sugar and junk carbs for the most part. I am cheering you on in maintenance! xoxoxo

    As I said before, losing this much weight is an impressive achievement. I don't think I could do that ! I wanted to send one more resource to you that I found well done and comprehensive. ( A book)...Just Eat (one reporters quest for a weight loss regimen that works) by Barry Estabrook. It was available through our library online reading. There is so much information out there regarding the best eating plan for weight loss and health. He has done excellent research and interviews as well as his own results trying various programs, plus how to maintain weight loss. It covers most of the plans available now as well as in the past, all in a very readable format. Sometimes think maintaining weight loss is as stressful, or more, than even losing it. I can't imagine how it must feel to achieve that goal and then watch the scale start back up. It happens 80% of the time. I'm sure you are on top of this but wanted to mention anyway.

    I love the look of this recipe! I’ve never had cauliflower rice, do you heat it before putting it in the bowl? Warm it?
