I’m at my goal.

I seriously cannot even believe I’m typing those words.

100 pounds down.

And now?

The hard work begins.

You know. Making sure I get all my water in and walking around the block more and making healthy choices and learning that broccoli tastes better than chocolate chip cookies.

Just between us? I was a little worried. How was I going to learn to cook? What was I going to learn to cook? How in the world was I going to prepare healthy meals that tasted good and kept me on track.

But now?

I have a system. I have a plan. I have a way to succeed.

All thanks to Walmart+.

Here’s what I made last night for dinner.

Doesn’t it look yummy?

It’s one of my new meals that I’ve added to my recipe spreadsheet that are so easy to prepare.

To make this all we did was grill chicken on the grill outside (and added a little bit of Tony Chachere’s seasoning).

Then we filled the bowls with this AMAZING cauliflower rice that I’m hooked on (I love this alternative to noodles, too), tomatoes, avocados and cheese.

That’s it.

Oh wait! I ended up adding a tiny bit of fresh basil to the top (after I took the pictures) from our herb garden.

Super simple and easy and SO YUMMY.

And the best part?

I plan out the recipes for the week (like this one) and then I head to the computer and put in a Walmart+ order for all the ingredients.

Walmart+ makes is SO EASY. It’s all right there and ready to go and it’s helping to keep me on track.

Here’s the way it works:

You can purchase a monthly membership for $12.95 or a yearly membership for $98 and you get Walmart+ FREE delivery (with a $35 minimum purchase) with a Walmart+ membership.

That means.

Free delivery on cauliflower rice.

Free delivery on tomatoes.

Free delivery on spaghetti squash (which I’ve been using in more recipes than I can count).

And free delivery on a whole lot more.

So when you want to turn spaghetti squash into spaghetti squash noodles or you are about to run out of dryer sheets, you don’t have to worry. Ordering online is just a finger click away.

You can order food items but you can also order all those household essentials you need like laundry detergent and dryer sheets and hand soap and hand towels and even shampoo and conditioner.

But that’s not all. With your Walmart+ membership, you might also get great member prices on gas and the in-store mobile scan & go functionality, too.

If you think this might work for you and you are interested in having groceries show up to your door like this?

Let’s go.

You can check and see which Walmart+ benefits are available in your area here.

You can sign up for Walmart + here.

It’s a big time saver.

I LOVE this new lifestyle.

I cannot even explain how this has changed my life and how Walmart+ is helping me to stay on track.

I love, love, LOVE it! I truly do! It makes life easier, saves me money and keeps me focused.

Here’s to celebrating life and broccoli.

And not necessarily in that order. 🙂

You are seriously so inspiring. I think your next book needs to be how you lost the weight, your motivation, and recipes. I personally know what I need to do, and by 1:00 I’m failing with a cookie in my mouth.

I've been wanting to try this recipe: https://www.budgetbytes.com/southwest-cauliflower-rice/ . Budgetbytes.com has never let me down when I have tried her recipes and this looked like a fun way to amp up the cruciferous veggie intake. She has several others which use cauliflower rice. Check it out!

So very, very proud for you. Karianne! You look beautiful, inside and out! You're fighting the good fight!!

  4. Image for Maggie Wallem Rowe Maggie Wallem Rowe

KariAnne, your site has been my favorite home decor go-to place ever since I read your first book with Tyndale House. And now you are inspiring me in another way! My metabolism has slowed way down as I have gotten older, and my weight has crept up. It's time to tell it to GET LOST, and you have inspired me to stay on track. You have always looked absolutely darlin', and now you look extra-amazing. Good for you, and thanks for encouraging us!!

Try this, it's our favorite. Place a little olive oil in a large fry pan. Sauté mushrooms in a pan -160z. fresh Add some onion Sprinkle of garlic powder, 1/2 tsp. salt, some fresh ground pepper. Family size bag of Green Giant cauliflower rice and 1/2 cup chicken or vegetable broth. Mix until heated through. Sprinkle some goat cheese on the top and place a lid on the pan, off of the burner, so cheese melts. I'm still trying to make homemade chocolate chip cookies taste like some thing healthy. : (

Not sure why several commas have disappeared. So sorry. P.S. my husband dislikes mushrooms but he sure loves this.

FYI, there are solo many great chocolate chip (and other) recipes online that are keto, or paleo, or even WWwhatever you're on...surf around. My fave Legos sites are gnom-gnom and sugar free Londoner and ibreathe, imbhungry. Good luck.

You look amazing! But I'm sure the real benefits are more energy, lower blood pressure, better sugar count & less pain... Then there is the Return Of Joy In Shopping 🥰

I so love your blog and Wednesday videos. You make me happy. I get so tickled at your expressions and wonderful smile. I think the best reason for me to consider the Walmart+ is that not only would I save a lot of calories, but money also. If I don't see it I can't buy it! I always take a list, but I am bad about not sticking to it. So thanks so much for the Walmart+ info. Have a blessed day!

  9. Image for Jan Fusco Jan Fusco

I am so happy for you. Congratulations on your wonderful accomplishments. I'm working on it. I'm down 42 pounds and taking it nice and slow. My initial goal is 52 pounds in 52 weeks. Two months to go. Thanks for all the inspiration.

  10. Image for Rhonda Rhonda

You look wonderful! And I'm sure you feel great!! One of my little tricks is to buy groceries mostly around the perimeter of the store--fresh, and not canned or boxed. For the middle-0f-the-store items, I check the sugar and carb content. The items must be no sugar and low carb. Otherwise, they remain on the shelves. ) Keep on inspiring others with your big heart and big smile!!

You look so cute!!!! Kari Anne, You are truly beautiful from the inside out. Thank you for inspiring us. I love cauliflower rice! Thank you so much for your beautiful spirit and inspiration! 💗

  12. Image for Jan Jan

Hi Kari Anne: Again I'm saying how amazing you look and I'm sure how you feel all over. It's so worth the struggle you go thru isn't it? Unfortunately I went on a diet during Covid and now have gained it all back again. I'd like to ask if you use low fat or fat free cheese or regular cheese? Are you trying to count calories now or how are you doing it? Keep up the great work you've done, I'm praying for you. Jan

  13. Image for Sharon Sharon

Congratulations on reaching your goal. As someone who has been battling weight for most of my adult life I know all too well what a challenge it is to maintain a weight loss. So far I have not been successful, but I'm not ready to give up. Kudos to you!

You go girl! So fun to watch you do this! I want to tell others about what you’ve done all the time! Hey my friend KariAnne did it! You are an inspiration! I despise shopping, this may be good for me!

  15. Image for Maria Maria

I would imagine that having food planned and then delivered would be such a money and time saver, not to mention the fact that you only get what you order. They won't accidentally throw in a bag of oreos!!!! Congrats to you:)

Such a pretty and delicious meal. One need not even think about whether it is healthy or not - just enjoy! The healthy part is the extra reward of it! Stay busy, Sweet Friend, it will keep you way from the snacks.

Your weight loss journey is amazing and inspiring! Tell me more about this "recipe spreadsheet!!" I think I want one!

  18. Image for Be Be

Hurray!!!!!!!!!!!!! All your hard work has paid off. You are a motivation for me. I've got a lot to lose and have gotten 30 off, so I just keep trucking. Yes, I have fallen off the wagon a few times, but I do feel so much better and doing aqua therapy, so that is fun. Thanks for being an encouragement. YES, I love the Walmart set up too. It's really been great through covid and I'm still going to keep using. I go to therapy and run through and pick up mine, but the whole system is great. I'm not worried about your maintaining. You look great. How was the reunion. I know you were the STAR

I know you are a busy gal, but how about more recipe/meal posts? Once a week would be too groovy and most helpful. Continue with your awesome day!

  21. Image for Tracy Tracy

Good for YOU! That's such an accomplishment so be proud Ü I'm at my goal weight, too, living a ketogenic lifestyle and I know how much cauliflower rice has become a staple for me, as well! Is much more versatile than people think. I "dry fry" it in a pan with chicken broth until all the liquid has evaporated out. Really takes out any strong cauliflower taste that most people don't like about it. That was a game changer for me getting my Husband to finally eat it Ü I also mixed it with cream cheese to make mock sushi rice used in my Keto California Rolls or Sushi Bake Casserole. And I only wish I didn't live out in the boonies so I could have Walmart deliver to my house. I'd love to read more posts about your healthy meal choices!

Recipe excel spreadsheet!?! Sitting here with my mouth hanging open. I never would have thought of using excel for recipes. Thanks!!!

I think understanding calorie density is the easiest way to keep it off. There's a great you tube video just posted that really does a great job of explaining this, and she has great recipes as well. The channel is plentiful kiki and the episode that just aired is: https://www.youtube.com/watch?v=spnwT-pt1tI Makes so much sense.

  29. Image for Claudia A Claudia A

Congrats!!! You look fabulous girly. I had a forced start. Yep got the wake up call from the Dr. after my last lab work. I started with the Foodi. It’s been easier to fix meals than my usual way to cook. The recipes are all over Pinterest. I was down 26 lbs in the first month. Fingers crossed I can do as well as you. Cheers.

When you mentioned what you were taking to lose the weight I went online to check it out. But the reviews were frightening enough I never ordered it. You appear to be doing well. Can you tell us about any side affects you experienced? Are you off of it now that you’ve reached your goal? I’m truly interested but hesitant. Thank you.

You look AMAZING!! But even better, I bet you feel amazing too! I am seriously obsessed with Walmart grocery pickup. We can’t get delivery in Podunk, KY but pickup is the next best thing! Such a timesaver!! Keep up the great work! 😊

  34. Image for Ann Ann

Dear Karianne, CONGRATULATIONS on making it to your goal weight!!!!! That takes so much commitment and perseverance, and you did it!!! You must be thrilled!!! You look absolutely beautiful!!! I lost 80 lb, reaching my goal in May of 2018. I did really well with maintenance until Covid, then let down my boundaries. So I am now working on taking off the Covid 15. But having 15 lb to lose is so much better than 80, and I NEVER want to go back to where I was!!! If I can give you any advice, I would say: Keep doing what you have been doing! If you have been sugar and junk carb free, keep on keeping on. If you used portion control, continue weighing and measuring. Weighing and measuring for life is the ONLY way I will have a chance at keeping the weight off, as well as staying away from sugar and junk carbs for the most part. I am cheering you on in maintenance! xoxoxo

As I said before, losing this much weight is an impressive achievement. I don't think I could do that ! I wanted to send one more resource to you that I found well done and comprehensive. ( A book)...Just Eat (one reporters quest for a weight loss regimen that works) by Barry Estabrook. It was available through our library online reading. There is so much information out there regarding the best eating plan for weight loss and health. He has done excellent research and interviews as well as his own results trying various programs, plus how to maintain weight loss. It covers most of the plans available now as well as in the past, all in a very readable format. Sometimes think maintaining weight loss is as stressful, or more, than even losing it. I can't imagine how it must feel to achieve that goal and then watch the scale start back up. It happens 80% of the time. I'm sure you are on top of this but wanted to mention anyway.

  36. Image for Donna Marie Donna Marie

We all are so proud of you!!! You are living a completely different lifestyle--but it is so worth it. You look soooooo good and I know Denny and the kids appreciate your efforts. I am glad you are cooking, as eating out leads to weight gain. You can do it, as I am in your corner (along with a few thousand others!!!) and we will help you stay at your goal loss. You go girl!!!

  37. Image for Barbara Barbara

Oh dear! I'm getting desparate over here!! What was the name of your diet victory? I need it really, really badly. Please share. Barbara G

  38. Image for Tracey Tracey

I love the look of this recipe! I’ve never had cauliflower rice, do you heat it before putting it in the bowl? Warm it? I’m sorry if you’ve listed that step, but I read the post 3 times and it just says add to the bowl. I have my chicken out, my avocados are ripe, and I’m ready to go! Congratulations on your amazing achievement!

Way to go, KariAnne! You have become the woman you've admired in the past. You deserve all the credit and don't forget to pat yourself on the back daily and admire your dedication. You are right though, keeping it off is just as hard as losing it! High five and hugs!
