Chicken Tinga Taco

I know this photo of Chicken Tinga Tacos looks fancy.

Not what you (or any of the thistles….big and small) are used to seeing from a macaroni and cheese kitchen.

I get it.

I understand.

Just look at these tomatillos.

And this corn.

And cilantro so crisp you can smell it.

Chicken Tinga Tacos

I made these tacos and corn in about 35 minutes and styled them on a plate to show all of you.

And then….while the steam was pouring off the tortillas and the sour cream was still melting on the corn, I wrapped the meal up in foil to keep them warm and tucked them away into a basket with a crisp white linen cover….

….and headed into to town to surprise my husband.

I  couldn’t wait.

I was so excited that I turned on Randy Travis and sang to my basket on the 15 minute drive into the town without any stop lights.

In fairness, we used to have a blinking light at the main intersection by the church and the activity center, but about four months ago it stopped working.

And now our little town is blinkless.

And so it was that yesterday, Randy and the basket and I turned at the blinkless intersection to surprise a pair of twinkling brown eyes that were expecting gas station pizza for lunch.

I wish you could have been there.

I wish you could have seen his reaction.

I wish you could have seen the smile as wide as a river that I saw when I pulled up looking super cute with yoga pants and new purple nail polish and my music blaring…..

….and a basket full of lunch.

I forgot to take pictures because I was so all about myself and the lunch and the purple nail polish.

But I had him reenact it when he got home.

And it looked a little like this….

….except with a few more twinkles.  🙂

    I agree great photos on this post. Beautiful. It looks so yummy. Too bad they can't fit a little cute cook in that box to make it for you too. Something like the Pillsbury Dough Boy. He would be so cute cooking a Blue Apron meal in my kitchen. How does he cook with that giant spatula anyway? I've often wondered's twice his size. Have a great weekend!

    You forgot to mention on the disclosure that twinkling brown eyes was yours too :-) Awwwww I wish I could have seen your big smile as you strutted up to your hubby and presented him with a special treat. You don't have to get to his heart through his tummy but I bet his tummy was doing a happy dance.     What a nice treat for your husband! That is so thoughtful! Blue Apron sounds like a dream - with both my husband and me working full time, it's hard to meal plan during the week. Having all the ingredients for a meal delivered would be a huge help!

I think your guy is a gem---you hit it on the head long ago (before I ever saw pictures of him) as having the 'twinkling brown eyes'. His smile isn't bad either. But, ahem...the food. Delish. What does your cute honey do for a living, seems you have mentioned it before but I cannot remember? He is one blessed man to have you and you two are so very blessed to have each other.     What a sweet moment shared and your dish was totally Devine looking and it's artsy presentation put it over the top. Photos were so great, I could imagine biting that corn on the cob, yummo! Nothing better then surprising a husband and I try to do it often, just to see that LOOK, snicker. I am behind reading your postings with our vacation coming up in a couple days and lots of prep work to do still but thanks for a little time of relaxation before getting back to suitcases and a toiletry bag that might bump our suitcase over when weighted. Sigh! What to take out, hmm.
