No Bake Peanut Butter Crunch Bars

This no bake dessert has two of my favorite ingredients, peanut butter and chocolate, with a secret ingredient that gives it the crunch.

  • 1 cup granulated sugar
  • 1 cup light-color corn syrup
  • 2 cups creamy peanut butter
  • 3 cups cornflakes
  • 3 cups crisp rice cereal
  • 3/4 cup butter
  • 4 cups powdered sugar
  • 2-4 serving size vanilla instant pudding and pie filling mix
  • 1/4 cup milk
  • 1 12 oz package chocolate chips
  • 1/2 cup butter


  • Line a 15 x 10 x 1 pan with foil.  Make sure the foil covers the bottom of the pan and reaches up over the edge of the pan.
    This is so you can lift it out when it's ready to cut.
  • Combine sugar and corn syrup in a medium saucepan on the stove.
    Stir until boiling around the edges.
    Heat and stir for one more minute.  Remove from heat.
    Stir in peanut butter until melted.  Stir in cornflakes and crisp rice cereal until coated.
    Press into the bottom of the pan.
  • Next, make the pudding layer.  In a medium saucepan, melt the 3/4 cup butter.  Add in powdered sugar, pudding mixes, and milk.
    Spread pudding mixture over the cereal layer and set aside.
  • For the frosting, in a small saucepan combine semi-sweet chocolate pieces and 1/2 cup butter.
    Stir over low heat until melted.
    Spread frosting over the pudding layer.
    Cover and chill for one hour or until set.
  • To serve, lift the foil out of the pan, place on a cutting board, and cut bars.
