I did it.
Really. I did it and I am so all about myself today that I can’t even stand it.
If I could, I would throw myself a parade and march down main street with a silver-spangled baton and a 76 piece marching band.
Because today….today I stood in the middle of my macaroni and cheese kitchen….home of the hot dog pot pie…
….and baked something.
And when I say something. I am not talking about the cookies that you pull apart. I’m not talking about the garlic bread that comes in the package that you have to pry open because the butter and the garlic on the pieces of bread freeze together.
I am talking about a real recipe.
A real recipe with four ingredients and a baking dish.
And that’s more action than my oven has seen in a very long time.
Pineapple Blueberry Dessert

I’m so all about her and her recipes today
18 oz of FRESH blueberries (Cheri said to cover the entire bottom of the pan….this took a little more than two containers)
20 oz. can of crushed pineapple (do NOT drain)
1 box of yellow cake mix
1 1/2 sticks of butter, melted
(Note: Before we proceed. I just want you to know. I discovered something about myself today. While I may be a little weak in the project tutorial area. I am so much better at the recipe step-by-step because most of the time I have no idea what I am doing….so I have to take it slowly. Perfect for the step-by-step)
1. Rinse your fresh blueberries and lay them out on a paper towel to dry.
Place the blueberries in a 9 x 13 pan.
(Don’t forget to pat dry as much as possible, or excess water will get in the bottom of the pan).
2. Top with crushed pineapple and spread it evenly over the top.
3. Sprinkle the dry cake mix over the top of the pineapple.
Pat the cake mix down lightly.
4. Slowly drizzle the melted butter on top of the cake mix.
Bake at 350 degrees for 40 min.
It will be a golden brown on top when it is done.
It can be served warm or chilled.
Cheri likes to serve it with Amaretto Whipped Cream.
*sigh* Maybe one day. We just had Cool Whip here.
So can you believe it?
I know it was only four ingredients and I know it did involve a box of cake mix and I know I just mixed up the ingredients, but that’s not even close to being the point here.
The point is….. I made it.
And it was delicious. Not delicious what like you tell your neighbor after she brings you over her bread pudding specialty and you don’t even really like bread pudding, but you feel like you should say it’s delicious because that’s the neighborly thing to do.
This was delicious like “four-helping” delicious.
Like go up two pant sizes because you wanted to eat the whole thing yourself delicious.
Like you are so all about yourself delicious that you feel like you need to express your undying gratitude to Cheri and her wonderful pages and pages of recipes that have way more than four ingredients….
…..and start planning your audition tape for The Next Food Network Star 🙂
